Delicious Chocolate Raspberry Granola Recipe

I made the most delicious homemade granola tonight. Here’s the recipe:

Chocolate Raspberry Granola

Serves 8

  • 3 cups rolled oats
  • 1 (1.2-oz) bag freeze-dried raspberries (I get mine from Trader Joe’s)
  • 1/2 cup slivered almonds
  • 1/3 cup unsweetened baking cocoa
  • 1/4 cup maple syrup (you can also use honey or some other natural sweetener)
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract

Preheat oven to 250 degrees. Melt coconut oil in warming oven. Combine all ingredients in a bowl and stir to coat the oats with the other ingredients. Spread the mixture in a thin layer on a baking sheet. Bake for about 30 minutes, until mixture is crispy.

  2. I can’t wait to try this!! Thank you so much for posting this and other recipes. I am still doing pretty well. Eat clean 90% of the time. Sometimes when schedules are crazy, you have to allow yourself those times where you are not eating as healthy as you would like.
My kids are slowly changing habits as well. Annie tried some new veggies the other night, and is now eating salad instead of just picking the carrots out. Kaleigh asks for smoothies in the morning, and Nicholas? Well…..we are still working on him to try some new things…..but I know he will get there eventually. =)
