Day 31

Breakfast: A 2-egg omelet with tomatoes and avocado (prep time: 10 minutes)

Lunch: I ate breakfast late so I munched on carrots and peanut butter and a few spoonfuls of leftover bruschetta from last night (prep time: less than 5 minutes)

Dinner: Pan-cooked chicken thighs with rice and homemade red cabbage slaw. We usually just use the Daniel Plan book recipe but tonight Paul got creative and threw some extra pineapple into the mix, which was a delicious addition (prep time: 30 minutes)
