Day 25

Yesterday got away from me, I had a crazy weekend. Here is what I ate on Sunday:

Breakfast: A cashew larabar, fruit at church (prep time: none)

Lunch: Rice scrambled with an egg and sauteed shiitake mushrooms, broccoli, carrots, and onions (prep time: 35 minutes including cook time for the rice – about 10 minutes of this was active cooking time)

Dinner: 2 baked chicken drumsticks, leftover spicy slaw (prep time: 30 minutes to bake the chicken – only about 5 minutes of active cooking time)

Snacks: Leftover whole grain crackers and feta, a handful of pistachios
