Day 23

We were out of town last night at a show so we ended up starving pretty late at night. We tried to still make healthy snack choices, though, luckily we found a 24 hour grocery store and grabbed some healthy snack food. Here’s what I ate yesterday:

Breakfast: Banana baked oatmeal with peanut butter (prep time: about a minute in the morning to spread the peanut butter)

Lunch: Leftover white bean cabbage soup, a hard-boiled egg, a handful of almonds and sunflower seeds (prep time: 5 minutes in the morning to reheat the soup and pack in a thermos)

Dinner: Leftover vegetable chili and rice (prep time: 5-10 minutes to reheat)

Snacks: A couple pieces of beef jerky, a cashew larabar (larabars are the best option for a portable bar – they are made of only real ingredients and generally have only 2 or 3 ingredients. The texture is not for everyone, but I think they’re pretty good)
