Day 9

Breakfast: Blueberry spinach smoothie (prep time: about 5 minutes)

Lunch: Leftover quinoa with a scrambled egg, wilted spinach, green onions, and garlic (prep time: 10 minutes)

Dinner: Vegetable stir fry with quinoa (shiitake mushrooms, asparagus, broccoli stalks, onions, ginger, a little lemon juice and low-sodium soy sauce) (prep time: 20 minutes)

Snacks: A handful of nuts, a banana with peanut butter and cinnamon
