Day 7

Breakfast: Blueberry chia seed porridge. This is really easy – 1 cup almond milk, 4 tbsp chia seeds, and a big handful of blueberries. Combine in a jar and shake it up. Refrigerate several hours – I made it last night and ate it this morning (prep time: 5 minutes active time, 4+ hours in the refrigerator)

Lunch: Winter lunch bowl (prep time: less than 5 minutes to put everything in a tupperware in the morning)

Dinner: Leftover ground pork stew (prep time: about 5 minutes to reheat)

Shopping for next week: I restocked fruits and veggies for the next week! Here’s what I got:

  • 1 package organic spinach ($3.99)
  • 1lb organic bananas (about 4, $1)
  • A little over 1lb turnips (organic not available, $1.50)
  • 1/4lb shiitake mushrooms ($1.50)
  • 1 bunch organic broccoli with long stems ($2.99)
  • Blue Diamond unsweetened almond milk (much more calcium than the store brand) ($2.99)
  • Organic cage-free brown eggs ($3.79)
  • 2-4 habenero peppers ($0.25)
  • 1 bunch of asparagus ($1.99)
  • 4 pears ($2.50)
  • 1 pineapple ($2.99)
  • Total = $25.48
